Late start to the morning. We hit up a local diner and I am looking over the breakfast section. It dawns on me that I can’t recall the last time I have seen a “western” omelette on a menu in years.
I find it somewhat ironic, that I live on the West coast, but no sign of that omelette. Is it no longer proper to add cheese, onions, peppers all in one omelette?
It was never my preferred omelette, but it was a staple from my waitressing days. Here in California, they add avocado and dub things, “Californian”.
So I ask, in your neck of the woods, is the “western” omelette available or has it become part of culinary history?
