Acorn Squash with Lentils

The other night I roasted acorn squash and made lentils to go with it.  It was a simple, yet hardy dish.

I used my air fryer to roast the acorn squash after brushing it with some maple syrup, a bit of coconut sugar and a sprinkle of kosher salt.  I like to prep on a cookie sheet with parchment.  It makes cleanup so much easier; esp. when using maple syrup or honey.

Just before preparing the squash, I sauteed some diced onions in homemade vegetable broth and added a bit of garlic, freshly chopped tomatoes, salt and pepper, a bit more vegetable stock with some lentils in my Instant Pot.

When both the squash and lentil were done, I layered them (as pictured).  It was a delightful and delicious dinner.  I was so proud of myself for making this vegan dish and I didn’t use any oil in cooking the onions or garlic.

NOTE:  You need to watch the broth so it doesn’t fully evaporate and add a tablespoon or two at a time until the the sauteing is complete.

In case you didn’t know, you can also eat the skin of the acorn squash (once it’s been cooked).  The more vegan recipes I make, the better I feel.  I can’t say it’s for everyone.  I also am not going to preach about animals and the like.  I am eating a mostly vegan diet to combat my colon cancer.

I’m trying more and more dishes that I never thought I’d eat.  Expand your horizons; try preparing a new dish today!

Air Fryer Brussel Sprouts

In my goal to be a good, ok, better vegan, I am trying vegetables and foods I never thought I would eat.  On the list of intimidating foods I don’t typically eat are brussel sprouts.

I made them a couple weeks ago in the oven.  They were ok.  Nothing to write home (or on a blog) about.

When I was at church this past week, someone mentioned making them in the air fryer.  Now why didn’t I think of that?  I use the air fryer for almost everything!

As it would happen, I purchased another bag of brussel sprouts a few days ago.  Their health benefits outweigh my desire to forego eating them.  I decided to give it a go in my air fryer.

I quartered the large pieces and halved the tiny ones.  I used a tiny bit of olive oil (maybe two teaspoons – max).  A sprinkle of salt, pepper and a dash of paprika.  I put them in a single layer in the air fryer.  Set the temperature to 400 degrees fahrenheit and cooked them for 8-10 minutes.

They turned out perfectly!  Nice and crispy.  I did drizzle about a teaspoon of balsamic vinegar on them after they were done cooking.

I highly recommend using the air fryer for these little cabbage-like veggies.  You can’t go wrong if you do.

“Fried” chicken

My husband enjoys fried chicken.  While I don’t mind making it for him, I do dislike the smell of oil that permeates my entire house and I get to relive that smell for several days.

Have I mentioned how much I love my air fryer?  If not, just know I do.  I am already considering purchasing a larger one because it’s just that great!

This recipe is exactly how I used to prepare chicken, before letting it cook in hot oil.  I am so grateful those days are officially history.  I only make “fried” chicken in the air fryer now.

Ingredients:

  • Gluten-free (or all-purpose) flour
  • Eggs; slightly beaten (you can add a bit of water or milk if you’d like)
  • Various spices (salt, pepper, thyme, paprika, etc.) to mix into the flour
  • Chicken legs

You can marinate the chicken in buttermilk overnight if you want.  I have done it with and without, and either way it turns out great.

Dredge the chicken in the egg and then in the flour.  Shake off excess flour and repeat.  Set aside on a small baking dish or plate and refrigerate until the flour becomes pasty (at least 30 minutes).

I usually prep the chicken before I leave for work and just cook when I get home.

Using your air fryer, heat it for a few minutes at 390 degrees.  Add chicken to the basket and cook 15-20 minutes per side; depending on thickness.  Flip chicken and repeat.

 

You get crispy “fried” chicken every time.  No oil, minimal mess and a clean-smelling house.

Definitely play with the spices you want to add to your flour.  I haven’t used corn meal or other coatings, but I intend to.  This basic recipe allows for a lot of modifying to your particular tastes.  Enjoy a healthier “fried” chicken.

Air Fryer XL

A few weeks ago, I treated myself to an air fryer.  I have been wanting one for over a year.  Kohl’s was having them on sale.  I received an additional 30% off by using my Kohl’s card and even received $10 in Kohl’s cash.  When all was said and done, I purchased this beauty at a great deal!    air fryer

I have used it a few times now and have yet to be disappointed.

If you follow my blog, you know I am a devoted mom to my now 12-year old daughter and my husband is Filipino.  That being said, I make sure my daughter understands her heritage, even though she is American.

Last night, she learned the art of rolling lumpia.

Now, she had me cracking up; had to tell you.  She is methodical in her “rolling”.  There was a distinct difference in our technique.  My looked like traditional lumpia rolls.  Hers…well, they looked like perfectly little packages.  They were a tad flatter and looked exactly like a perfect package.  It was ADORABLE.  She was so proud of herself (as was I).

 20180419_190001.jpg   She’ll improve her technique.  Yet, we had another cooking bonding moment.  As homeschoolers, life skills are at the top of the list.  It’s great to have knowledge of history, able to do math, know some science, etc., but if she can’t function on her own, then I failed as a parent.  I do not have to worry where cooking is concerned.

As my daughter got into her rolling groove, she would start humming.  I’ve caught her doing this before.  She is very content in the kitchen, even if she says she wants to be a vet and take care of animals.  It’s nice to see her so relaxed when she’s preparing food whether it’s for herself or for a family dinner.

Now, as far as the air fryer goes it makes perfect lumpia!  No frying, but all the crispy goodness that should be there when you bite into the perfect little roll.  I cook mine in a single layer (about 6 or 7 at a time).  I set the machine to 390 degrees and each batch took 10 minutes to cook.  I would flip each lumpia at the halfway mark.  You will need to cook in batches, but they are very hot when they come out of the air fryer, so they will still be warm when you go to eat them.

Anyone who’s ever fried lumpia on the stove knows your house smells of cooked oil for days after making batch after batch of lumpia.  Using the air fryer, you only smell your food.  Not to mention, how much healthier this option is.  You lose nothing by using the air fryer over traditional oil.  Well, maybe you’ll lose a few pounds…but that’s a good thing, right?
